  • 1 lb Maa Paneer, cut into small bite-sized cubes
  • 1/2 cup plain yogurt
  • 1 tbsp ginger-garlic paste
  • 1 tsp each: paprika, garam masala, chaat masala
  • 1 tbsp oil, salt to taste
  • 8 mini flour or corn tortillas
  • 2 cups shredded cabbage & carrot
  • 1/4 cup yogurt or mayo, juice of 1 lime, handful mint & cilantro, chopped
  • Tamarind or green chutney, for drizzling

Steps

  1. Whisk yogurt, ginger-garlic paste, paprika, garam masala, chaat masala, oil, and salt; toss with paneer cubes and marinate 20–30 minutes.
  2. Sear the paneer in a hot skillet or on skewers under the broiler until charred at the edges, about 6–8 minutes.
  3. Toss cabbage and carrot with yogurt or mayo, lime juice, mint, and cilantro to make the slaw.
  4. Warm the tortillas, then fill with slaw and a few paneer tikka bites.
  5. Finish with a drizzle of tamarind or green chutney and serve immediately.

  • 1 lb Maa Paneer, cubed
  • 4 tomatoes, pureed
  • 1 onion, roughly chopped
  • 10 cashews, soaked
  • 1 tbsp ginger-garlic paste
  • 3 tbsp butter
  • 1 tsp kashmiri chili powder, 1 tsp garam masala
  • 2 tbsp cream, 1 tsp sugar, salt to taste

Steps

  1. Simmer tomatoes, onion, cashews, and ginger-garlic paste until soft, then blend smooth.
  2. Melt butter in a pan, pour in the blended gravy, and cook 8 minutes.
  3. Stir in chili powder, garam masala, sugar, and salt.
  4. Add paneer cubes and simmer 5 minutes until warmed through.
  5. Finish with cream and a knob of butter on top. Serve with naan or rice.

  • Bell peppers & onion, cut into chunks

Steps

  1. Whisk yogurt with ginger-garlic paste, lemon juice, spices, oil, and salt.
  2. Fold in the paneer cubes, peppers, and onion; marinate at least 1 hour (overnight is better).
  3. Thread onto skewers, alternating paneer and vegetables.
  4. Grill or broil 10–12 minutes, turning occasionally, until lightly charred.
  5. Serve hot with mint chutney and lemon wedges.
Paneer Stuffed Paratha

  • 1 lb Maa Paneer, grated
  • 2 cups whole wheat flour, plus extra for dusting
  • 1 green chile & small handful cilantro, finely chopped
  • 1/2 tsp each: cumin powder, garam masala, ajwain (carom seeds)
  • Salt to taste
  • Ghee or butter, for cooking
  • Water, as needed for the dough

Steps

  1. Knead the whole wheat flour with water and a pinch of salt into a soft dough; rest 15 minutes.
  2. Mix grated paneer with green chile, cilantro, cumin, garam masala, ajwain, and salt.
  3. Divide the dough into balls, roll each into a small disc, and stuff generously with the paneer filling.
  4. Seal the edges and gently roll out again into a flatbread, dusting with flour as needed.
  5. Cook on a hot griddle with ghee until golden brown spots form on both sides.
  6. Serve hot with yogurt, pickle, or chutney.

  • 1 lb Maa Paneer, cubed
  • 3 tbsp cornstarch, 2 tbsp all-purpose flour
  • Oil for frying
  • 1 tbsp garlic, 1 tbsp ginger, finely chopped
  • 2–3 dried red chiles or green chiles, sliced
  • 2 tbsp soy sauce, 1 tbsp green chili sauce, 2 tbsp tomato ketchup
  • 1 tsp vinegar, 1 tsp sugar, salt to taste
  • 1 tsp cornstarch mixed with 3 tbsp water, for the gravy
  • 2 tbsp oil, spring onions for garnish

Steps

  1. Coat paneer cubes in cornstarch and flour, then shallow-fry until golden; set aside.
  2. Heat oil in a pan and stir-fry garlic, ginger, and chiles over high heat for 30 seconds.
  3. Stir in soy sauce, chili sauce, ketchup, vinegar, and sugar with a splash of water; bring to a simmer.
  4. Add the cornstarch slurry to thicken the sauce slightly.
  5. Toss in the fried paneer, coat well in the glossy sauce, garnish with spring onions, and serve hot.

Ingredients

  • 1 lb Maa Paneer, cubed
  • 4 cups spinach, blanched and pureed
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 1 tbsp ginger-garlic paste
  • 2 tbsp ghee or oil
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric, 1 tsp garam masala, salt to taste
  • 2 tbsp cream (optional)

Steps

  1. Warm ghee in a pan, sear the paneer cubes lightly, and set aside.
  2. In the same pan, toast cumin seeds, then sauté onion until golden.
  3. Add ginger-garlic paste and cook 1 minute, then stir in tomato puree and spices.
  4. Fold in the spinach puree and simmer 8–10 minutes.
  5. Add the seared paneer back in, finish with cream if using, and simmer 5 more minutes.
